As I mentioned last week, I am only going to dedicate entire posts to New Food Monday if they are a resounding success. Which means – you guessed it – we found a winner last night!
It was nothing fancy. We cooked these bad boys up.
Then we put out plates with warmed pitas, crumbled feta, two kinds of hummus (plain for the kiddos and an incredible Cedar’s brand wasabi one for the grown-ups; anyone ever try this kind?), and an array of veggies (cucumber, celery and red peppers). Everyone concocted something a little different: Buddy – who has an aversion to mixing foods together – ate everything individually; Dr. G. piled all his goodies on top of his pita like a pizza; I made more of a sandwich with my falafel fixings; and Mimi nibbled on pretty much everything, including half a pita with hummus.
In the end, everyone was full and happy and there was a lot of joking and chatting around the dinner table. And when I told Buddy we’d be making this again, he said (sincerely), “Nice!”
You really can’t ask for much more than that. Chalk this up to a major New Food Monday success.
I love Trader Joe’s for healthy, easy to prepare dinner items. Do you have a favorite TJ’s product?
