Hooray for normalcy!
After surviving last week as a “single married mom,” I am beyond excited (thrilled? relieved? ecstatic?) to resume our typical routine this week – even if it’s not really typical, since Buddy doesn’t have school on Monday and Dr. G. gets Veterans Day off too. But compared to the chaos of last week? I’ll take it.
It also means I can resume our meal planning – including a return of New Food Monday, which took a hiatus last week in light of the routine shake-up. I haven’t broken the news to Buddy yet, though …
Here’s what I’m very happily planning for this week:
Sunday: Skinny Baked Broccoli Macaroni and Cheese via Skinnytaste (family meal)
(New Food) Monday: Another one via Skinnytaste – I’ve been so excited to try this! Spaghetti with Creamy Butternut Leek (family meal)
Tuesday: Gardein Crispy Chik’n Salad (adults); tortellini and veggies (kids)
Wednesday: Kale Market Salad that we didn’t make last week (adults); chicken and sweet potatoes (kids)
Thursday:Veggie burgers and roasted veggies (cauliflower? brussel sprouts?) (family meal)
Friday: Pizza and salad (adults); Annie’s mac & cheese and broccoli (the kiddos’ standard Friday night meal)
Saturday: Undecided – we’re having my sister, brother-in-law and baby niece over for dinner – maybe lasagna?
But as much as I love meal planning, the thing I am most looking forward to this week is jumping back into my normal workout schedule! As many of you know, taking the last two weeks off due to Dr. G.’s travels and my flu/cold was incredibly tough for me. So trust me when I say I am chomping at the bit to get back on track.
Sunday: Rest
Monday: Body Pump @ 5am
Tuesday: Lunchtime run (2-3 miles)
Wednesday: Body Pump @ 5am
Thursday: Treadmill run at 5am (3-4 mi)
Friday: Boot camp @5am
Saturday: Body Pump @5am
One random side note: last week, I was stuck with elliptical machine workouts in my basement while the kiddos were still sleeping, so I started watching “Revolution” on demand. Does anyone else watch that show? The writing can be a little rough and sometimes it resembles “Lost” a little too closely, but I got sucked in. Adding it to our DVR schedule …

Congrats on surviving your solo parenting week! I have five days and I’m over half way through it, so I’m feeling good. But it’s always tough.
I love your New Food Monday plan. And enjoy getting back to normal with your workout routine, I’d be more than ready, too!
