This week’s meal plan is a good representation of what many (though thankfully not all) weeks are like in our house.
I’ve got PTO meetings out the wazoo as we gear up for our big fundraiser on Friday night. And Dr. G. has work deadlines and needs to pull a late night one night this week.
Doesn’t quite add up to quality family meal time. Sigh.
So for dinners, this means nothing fancy. No complicated recipes (not like we’re that ambitious on weekdays anyway). Simple and easy is the way to go, especially since I’m still trying to loosely follow a combination of the Zero Belly Diet and the Whole 30 Diet (which has been working okay so far…no dramatic results, but definitely less in the bloat department).
So sorry if the menu is a little lackluster, but this is reality…at least for us this week 🙂
Meal Plan
Sunday: Green lentil soup (a la Heidi Swanson) — makes great lunch leftovers
Monday: Thai kale salad (loosely based on this recipe)
Tuesday: Some sort of frittata or omelet
Wednesday: Black bean tacos
Thursday: Another PTO event from 5-7:30pm (where I’ll be selling raffle tickets), so this will be a dinner on-the-go
Friday: I have my PTO event, so dinner for me will likely be a 6-inch veggie delite sub from Subway
Saturday: I’m painting our basement (!) all weekend, so my progress will likely dictate our meal plans
Workout Plan
I admit, I was pretty ambitious last week, squeezing in six substantial workouts. Of course, now I’m kind of paying the price. I’m sore and achy, which I’m really hoping is a result of exercise and not the various bugs and flus going around the office.
Sunday: 4 mile run (no time for a long run — had to head into Boston for brunch and the ballet! Check out a recap tomorrow!)
Monday: Rest day
Tuesday: 4 mile run (intervals)
Wednesday: Body Pump
Thursday: Spin
Friday: 4 mile run (hills)
Saturday: Barre class

I like how you are doing a meal plan alongside a workout! It is great to see other people who do this- though I don’t do it on my blog, I have it at home to keep me motivated!
