Our mornings are generally pretty chaotic, so most of the time breakfast for me is either (a)a smoothie or frozen waffles in the car on my commute, or (b) yogurt or oatmeal at work once I’m settled at my desk.
But I’m not gonna lie. It can get pretty boring. Which is why I’m always looking for new ways to mix it up.
In the fall, I love adding canned pumpkin (REAL pumpkin, not pumpkin pie puree) to, well, pretty much everything. It’s a fabulous way to get some added veggies and fiber into your diet.
My latest concoction might be my favorite. It’s pretty simple:
- Oh My Yog! Madagascar Vanilla Bean yogurt
- 1/4 cup canned pumpkin mixed with a few sprinkles of pumpkin pie spice
- 1/8 cup Nature’s Path Pumpkin Flax Granola (mix of oats, pumpkin seeds, flax seeds, cinnamon and molasses)
Now here’s where the fun begins. You can layer it up like a parfait if you’re feeling fancy, or just mix it all up into a bowl, which doesn’t look as pretty but tastes just as delicious. Between the pumpkin and the cranberry and the creaminess of the yogurt, it’s like fall in a bowl.
For some added crunch and protein, I’ve also started adding a sprinkle of Nature Path’s Q’ia (pronounced “key–ah”), a cereal made up of superfoods chia seeds, hemp seeds, and buckwheat, along with vanilla-dusted cranberries and almonds.
So, yeah, it looks pretty nasty but it is soooo tasty. And between the fiber in the pumpkin and the protein of the yogurt, it is crazy filling. No need for a mid-morning snack.
And the best part? You can throw it all together in some Tupperware in the morning, like I usually do, and enjoy when you’re settled in at work. Delicious + convenient.
