Hope everyone is having a good weekend! I think I am still flying high from yesterday’s springlike temperatures. Not only did I get out for a steady, 9 mile run in the sunshine, but I also went out that afternoon wearing just a puffy vest instead of my ginormous down jacket. Fingers crossed that this is a sign that spring is really on its way, and that it wasn’t just a tease.
I may also be flying high from my first experience baking Irish soda bread!! Thanks so much to my friend K for the recipe!
This week’s meal plan is not overly ambitious and features some of my old (and some new) favorites:
Meal Plan
Sunday: Yes,I am attempting to make those sweet potato and quinoa “meatballs” again for the third straight week
Monday: Asparagus and eggs
Tuesday: Spicy chickpea wraps with cilantro and avocado
Wednesday: Veggie burgers and roasted Brussel sprouts and carrots
Thursday: I have a work event so the family is on their own!
Friday: TBD
Saturday: Dinner out or peanut Thai noodle salad
I am also planning on making a batch of chickpea salad from my new Oh She Glows Cookbook. Even after 25+ years of vegetarianism, I will fully admit to missing chicken salad so I’m always looking for vegan substitutes. This recipe sounds promising, so fingers crossed!
Workout Plan
This week, I am tweaking my routine a bit by incorporating some lunchtime workouts. I’m pretty excited, because instead of doing my midweek runs at 5am, I can “sleep in” and do them at the new gym at work, which also has an indoor track …. meaning no treadmill!! Hurrah!
The other highlight this coming week, which I mentioned in my last “Five for Friday,” is the official kickoff to my 2014 racing season! I admit to not having high expectations for Saturday’s 5K — I’ll honestly be happy finishing faster than last year’s time of 25:55 and just getting that first race under my belt.
Sunday: Rest
Monday: Body Pump
Tuesday: 4 miles (with 2 at tempo) at lunch
Wednesday: Fast 5K at lunch, followed by light weights
Thursday: 5 miles (moderate) (at lunch or in AM)
Friday: Boot camp (or rest day)
Saturday: Shamrock Shuffle 5K (I’m scheduled to run 9-9.5 miles this weekend, so I will try and make up the other 6 or so miles on Sunday)

I think we’re in the 50’s today which feels like summertime after this horrible winter! The Irish soda bread looks delicious, what does it taste like? Love the workouts, and wish you good luck on your race!
