I took Mimi with me on Thursday to our town’s community farm to pick up our loot. So exciting! This week’s bounty included an interesting mix of some of my favorites (broccoli, romaine, swiss chard, bok choy), some of my least favorites (beets) and one interesting vegetable I’ve never heard of before.
Yes, kohlrabi, I’m talking to you.
The great thing about our CSA is the timing: we pick up on Thursdays, which gives me plenty of time to figure out what we have and come up with our meal plan incorporating that produce before I hit the market on Friday night.
I got some great advice from my friends on Twitter and Facebook about what to do with beets. For example, who knew you could puree them and use them in brownies and other baked goods? To be fair, I haven’t tried them recently, and we didn’t get a lot of them in our share. Since I’m always preaching the importance “trying new foods” with my kids, I think I need to walk the walk and and actually try making a dinner dish with them.
The other fabulous thing about this week’s meal plan? No. More. T-ball. That’s not to say we don’t have a busy week in store (lots of “last week of school” activities), but it feels much more manageable than the last month or so has been.
And with that …. here’s this week’s meal plan, starting with last night’s dinner:
Saturday: Little Quinoa Patties (recipe in Heidi Swanson’s Super Natural Every Day; double recipe and freeze extras) and Roasted Root Vegetable Medley
Sunday: Dinner: Grilled Sesame and Garlic Tofu with Wilted Boy Choy
Make Ahead for the Week (lunches, etc.): Vegetable soup with Parmesan Toasts
(New Food) Monday: Broccoli and Cheese Soup (holdover from last week; I had a looooong day at work and we got home on the later side and the idea of making soup was less than appealing)
Tuesday: Warm Lentil Salad with Roasted Beets and Goat Cheese (without bacon and with vegetable stock)
Wednesday: Leftovers
Thursday: Leftovers
Friday: Homemade sweet potato fries and veggie burgers
Saturday: Dinner out
Workout Plan
I was going to run a local 5K yesterday but decided against it. It’s a race I’ve done before, and it’s for a good cause, but it’s really crowded. Plus, that would have meant Dr. G. schlepping Mimi to Buddy’s last soccer practice, since the race was at the same time. Instead, I found a tiny local 5K to run next Sunday. I figure that my best 5K times to date were in small races, so it’s worth a shot …
Sunday: Walk with Mimi (stroller pushing – 45 min)
Monday: Body pump
Tuesday: 4 miles
Wednesday: Body pump
Thursday: 4 miles
Friday: Boot camp
Saturday: Body Pump

I knew I would regret not joining a CSA this year. I’ve been experimenting with beets. They’re great for juicing but other than that I haven’t had much luck.
