Happy Sunday, friends! I warn you that this going to be a quick post. We are headed out on a cruise around Boston harbor today (and I cannot get that Gwyneth Paltrow/Huey Lewis song “Cruisin'” out of my head! Gahhhh!) so I need to squeeze in my run and get the kiddos ready so we can get out the door in a decent time.
Drink More H20 Update: That new 32 oz cup I mentioned in last week’s meal planning post is awesome. I’ve been drinking at least one every day while I’m at work. That’s huge for me! Adding a slice of lemon totally helped, plus the fact that is has a straw. My only complaint? It’s not exactly spill proof. And it’s too big to fit in my car cup holder. Oh well – a small price to pay for boosting my H20 intake, right?
Here’s this week’s relatively low-key meal plan…
Meal Plan
Sunday: My FAVORITE summer salad: chunks of crusty bread, mozzarella balls, and fresh tomatoes and cucumbers from our farm share, drizzled with reduced balsamic vinegar and olive oil. This will be perfect after a day on the water.
(New Food) Monday: We have sooooo many zucchinis to use from our farm share! So tonight we’ll make zucchini frittatas with a side of the crusty bread from the previous night’s salad.
Tuesday: Cold soba noodle peanut salad with tofu and ginger peanut dressing (one of my all-time faves!)
Wednesday: Pasta with goat cheese, zucchini and whatever veggies we need to use up
Thursday: Leftovers
Friday: It’s a typical Friday night here … Annie’s mac & cheese for the kiddos, “kitchen sink” salad for us grown-ups
Saturday: Dinner out … in NYC!!!!!
Workout Plan
Because we’re away next weekend and our jam-packed “staycation” begins the following week, I want to try and squeeze in as many quality workouts as I can this week. However, I slightly tweaked my knee on Friday so I need to keep an eye on that.
Sunday: 6-7 miles
Monday: Body Pump (depending on how my knee feels after today’s run)
Tuesday: 4 miles
Wednesday: Body Pump
Thursday: Spin (which I haven’t done in ages … should be interesting)
Friday: 4 miles
Saturday: Lots and lots of walking in NYC 🙂

I generally try to always serve my son the same thing we eat, but I miss my big salads! I love your Friday night plan of something easy and healthy-ish for the kids, and a big salad for the grown-ups!
