Happy Sunday, friends! As many of you know, I am running a half marathon today(stay tuned tomorrow for a recap!), which I feel is the perfect lead-in to help me get back on track with meal planning, which I have definitely been pretty lax about lately.
One reason: This fall has been just insanely busy. Between birthdays and sports and family events and races and shopping for a new car, nearly every single weekend has been booked with something, which means that in addition to some inconsistent meal planning, we haven’t had any time to do any of my favorite fall activities, like apple picking or hayrides or haunted houses or pumpkin picking or corn mazes. Sigh. I am not making this mistake again next year.
Anyway, this is not the most ambitious meal plan in the world, but I wanted to come up with something realistic, knowing that we may end up eating one weeknight meal out, depending on where we are with our car negotiating (one of the most painful processes I’ve ever been through) and how I am feeling tonight post-race.

I always forget how much my kids enjoy eating quesadillas, which is perfect because I love Mexican salads, and while the kids won’t eat the salad, they will eat the salad ingredients (corn, black beans, raw red peppers) separately as side dishes. I usually start with romaine, add black beans, roasted corn, chopped avocado, a quick cilanto dressing and some sauteed onions and red peppers. If I have any grains like brown rice or quinoa in the fridge, I’ll sometimes throw it in as a base. YUM.
Wondering why I left Friday blank? I’ll let you in on a little secret: it’s my last day at my current job. I have a post coming later this week with more details, but know that it’s all good (new opportunities, etc.). So since this is kind of a big deal (I had been in my current position for 6+ years), I don’t know if I’m necessarily going to feel like cooking dinner. I think takeout and a bottle of wine is in order, no?

Exercise Plan
I’m not gonna lie: I love having an excuse to take a few days off from the gym and being able to “sleep in” until 6am, rather than dragging myself out of bed at 4:45am. Thanks to today’s half marathon, I have that excuse! Because of that, my exercise plan — much like my meal plan — is not particularly ambitious this week.
Sunday: 13.1 miles (!)
Monday: REST
Tuesday: REST
Wednesday: Body Pump
Thursday: Easy 3 mile run
Friday: Boot Camp
Saturday: Drop-in bikram (hot) yoga class
A hot yoga studio recently opened in town that I’ve been curious to check out, and I figure what better time than a few days after my half marathon?
