Yep, two weeks in a row! Can you believe it?
I’m still keeping with our whole foods approach to meals … no processed junk, etc. I also am kind of embarrassed to admit it, but I ordered a copy of the Zero Belly Diet, which should be arriving tomorrow. I need to do something to get rid of this holiday weight besides boosting my miles (which I have been), and some preliminary research suggests this plan emphasizes whole foods and is also pretty vegetarian friendly. If all goes well, I’ll definitely post a review down the road here on the blog.
As you’ll see, there’s no dinner option tonight. That’s because I’m headed out to the Tales from Another Mother Runner book party and will grab dinner on the road.
I love Dimity and Sarah, the wonder women behind Another Mother Runner, an awesome community for — yup — moms who run (although it’s so much more than that). This event is part book tour, part mother runner meet-up, part celebration of their third book … and just what I need to get back into a running and racing frame of mind. I’ll be posting updates on Twitter, Instagram, and Facebook tonight if you want to follow along.
Anyway, here is our meal plan and my workout plan for the rest of the week — as you’ll see, I have a few recipes here from Cookie + Kate, one of my new favorite go-tos for healthy vegetarian recipes).
Meal Plan
Tuesday: Heirloom “BLT” salad from Cookie + Kate (excited to try her “coconut bacon”). BTW, there’s no way my kids will eat this, so this may be a pasta and meatballs night for them.
Wednesday: Carrot “fries”and veggie burgers
Thursday: Black bean and arugula tacos w/feta (adapted slightly for the kiddos)
Friday: Green salad with lentils (nothing fancy) (Annie’s mac and cheese for the kiddos)
Saturday: TBD
(And I have to add that last night we made this a-maz-ing butternut squash frittata with fried sage from (yep, you guessed it) Cookie + Kate.)
Workout Plan
Another week when I can’t squeeze in a barre class … sniff …
Monday: Body Pump in AM
Tuesday: I want to say I’m going to do an interval run in the AM, but I have a feeling I won’t be back until late tonight from the book party, which makes getting up at 5am pretty rough. If I can’t get my bum out of bed, I’ll try and squeeze in a lunchtime run at work.
Wednesday: 3-4 mile hills run in AM
Thursday: Spin class in AM
Friday: Boot camp in AM
Saturday: Shamrock Shuffle 5K (if the weather cooperates) — my first 5K with Buddy!
