Anyone start celebrating St. Patrick’s Day a little early?
I will say, it’s hard being a vegetarian Irish gal. I remember St.Patrick’s Day dinners at a little girl, the smell of corned beef and cabbage, potatoes and carrots wafting in from the kitchen. Ahhh, it was one of my favorite meals for a meals for a long time.
Since I stopped eating meat, St. Patrick’s Day has been more about green beer and Guinness and cupcakes with green frosting, but this year I decided I want to go more of a traditional route. No, I won’t be eating (or even making) corned beef, but instead I’m preparing my own version of an Irish vegetarian feast (and next year I’ll be on the hunt for a kick-ass vegetarian Shepherd’s pie recipe, if anyone has one!!)

Meal Plan
Sunday: Homemade mushroom pizza, per (gasp!) Buddy’s request!
Monday: Potato-leek soup, leftover Irish soda bread (which I froze from last week), a wedge of Dubliner cheddar cheese, and Smithwick’s
Tuesday: Roasted root vegetable salad
Wednesday: Single moms pizza and wine night
Thursday: Peanut soba noodle salad (with tofu)
Friday: Veggie burgers and roasted asparagus
Saturday: Girls night out
Workout Plan
Yesterday officially kicked off the 2014 racing season! I’m really happy with my 5K results (stay tuned tomorrow for a recap), but I admit it’s kind of tricky when you’re training for a longer (and slower race) yet have a shorter — and faster — race on the weekend. That’s why I decided to break up my planned 9.5 miles into two runs.
This week also starts the introduction of hills into my training routine (which based on the way I handled the hills during yesterday’s 5K, well, let’s just say some training is definitely needed!).
Sunday: 6.5 miles (combined with yesterday’s 5K)
Monday: Light weights at lunch
Tuesday: Kenyan hills (warm up/easy run for 10 min, 3 x 3 min uphill followed by 2 minute recovery jog, then 5 min cool down)
Wednesday: Body Pump
Thursday: 4 miles (moderate pace)
Friday: 2-3 miles followed by light weights at lunch
Saturday: 10 miles
