I am going to come right and out say say it: this is not going to be an easy week for sticking to our meal plan (part of Laura and Jillโs Meal Planning Challenge for October.)
As we get deeper into the school year, our calendar just seems to fill up more and more, and when I sat down to actually write up our meal plan, I realized that 2 out of the 7 nights some portion of our family will be away, whether it’s at a blogging event (me), a Lego build-a-thon school fundraiser (Dr. G. and Buddy), and our Saturday schedule is so insane that it practically screams, “Dinner out!”
A few years ago, I would have let this derail my meal planning and would have probably just decided to “wing it” most of the week. But just because we’re busy a few nights doesn’t mean the other nights have to suffer; plus, we have New Food Monday to deal with as well.
So with that, here’s our meal plan for the week of Oct. 22:

Knowing how hectic our schedule is this week, I thought it would be a helpful exercise for myself (no pun intended) to map out my workout schedule for the week as a way to hold me accountable:

We recently tried those falafels from Trader Joe’s and they were a huge hit with my whole family. I love TJ’s for premade meals on our busy nights–they are a lifesaver!

The falafels were a huge success here too – and the entire meal took about, hmmm, 20 min. to assemble! I think I will be adding them to our weekly shopping list ๐
