I’d like to say my meal planning has been on hiatus. That’s a good way of thinking about it. Things have been super busy lately, so rather than stressing over sticking to our meal plan I decided to be realistic and “go with the flow” until things settle down.
So now I’m back, at least for a few weeks before we go into vacation-mode. And since a Florida vacation usually equals a swimsuit, I’m trying to be a little more mindful, food-wise, these next few weeks. However, as you’ll see, it doesn’t mean I won’t enjoy single moms pizza and wine night on Monday.
Here’s what’s on tap this week:
Menu
Sunday: I heart making soup on Sundays, particularly more intricate, time-consuming recipes. Not only does it make a yummy dinner, but it also means we have some lunch leftovers for the week. Today we’re making Jack Bishop’s Butternut Squash Soup with Chipotle Chiles and Garlic. Um, yeah, we won’t be feeding this to the kiddos.
Monday: We’re taking a break from New Food Monday this week (insert a hearty “Yahoo!” from Buddy). The kiddos and I are heading to my friend’s house for pizza and wine night (and some Disney strategy planning).
Tuesday: Goat cheese and black bean tacos
Wednesday: Tofu peanut soba noodle salad (one of my Top 10 Meals)
Thursday: Regular ol’ pasta and meatballs for the kids; pasta, chickpeas and olive oil combo for me
Friday: My in-laws arrive for an Easter visit, but I’m not sure if they’ll be here for dinner, so this will be a game time decision
Saturday: I’d say the chances are high we’ll be going out for dinner
Workouts
I’m officially in Week 2 of my half-marathon training. Week 1 went pretty well (although those intervals were much tougher than expected). My only concern this week is that my Monday-Friday workouts all require getting up between 4:45 am and 5 am. As you know, I am an early morning exerciser, but even I will admit that doing it five straight mornings when it’s still pitch black outside is pretty brutal. I usually try to give myself at least one weekday morning off. So we’ll see how it goes. I am also going to jump back in to my daily planks and other ab exercises – you know, because of the whole bathing suit thing (and I actually purchased my first bikini in at least a decade and I am completely terrified). Eeeek!

Early mornings are easy. It’s the afternoon/early evening workouts that kick my butt! No thoughts on swimsuits yet. Maybe that’s because it’s snowing outside π
